For an olive oil to be considered of “superior quality”, it must
have no more than 0.8% free Oleic acid, often called “acidity”. Low
acidity indicates the olives were healthy, harvested gently
to avoid bruising and pressed very soon after harvesting, avoiding
fermentation of the fruit. The oil must also have zero defects and
taste of the olives it was made from, and pass a number of other
tests.
With less than 0.4% acidity, Cooperativa Sitia is amongst the
highest quality P.D.O. extra virgin olive oil available.
